You want the surface to get up to 400 degrees F, but it should not smoke. Step 7: To make sure your oil is hot enough, add a pinch of oil to the pan. If the oil bubbles up and becomes foamy, it is hot enough. Step 8: Gently lower the egg whites into the hot oil. Do not touch the yolk with your fingers. It will scorch. Step 9: Use a long metal spatula to gently swirl the egg whites around. Use this spatula to gently turn the egg whites in the hot oil. Step 10: Cook the egg for 2 to 3 minutes on one side. Don’t flip it, or you will burn the yolk. Remove it from the pan with the spatula. Step 11: Place the cooked egg on a plate or dish towel. Step 12: Invert the egg and peel away the shell.
