I have a very easy and great side dish. I love salmon and potatoes.
So I decided to throw this dish together in a hurry. I always like to have a good side dish ready when friends are over. So I start out with a frozen salmon fillet.
I take out the salmon and put into the microwave for 5 minutes.
When the time is up, I take out the salmon, drain it and put it in the oven at 375 for 10 minutes.
Then I add some chopped red bell pepper and a small can of sliced tomatoes.
Next I cook the potatoes. I just put them in a bowl and cover them with water and microwave them for 10 minutes.
While the potatoes are cooking, I get out the tomatoes and the bell pepper. I drain the tomatoes and add the bell pepper.
Then I put the potatoes and the vegetables in a bowl and put them back in the microwave for another 3 minutes.
When the time is up, I drain the potatoes and the bell pepper and put them in a serving bowl.
You can serve the salmon and vegetables by themselves, but I always like to serve it with pasta.
