One of the most popular issues was their March 2019 “How to Cook” issue, which included recipes for salmon. Cooking salmon is easy, but it’s important to remember some basic tips before starting. Start with a large flat surface, like a cutting board. You want the fish to lie flat so it can cook evenly. If you use a smaller plate, the fish will cook faster and the result will be heavier. Cover the surface with plastic wrap and place a bowl, like a bain marie, on top of that. Heat the bowl, or bain marie, in a large stockpot over medium heat. Once it reaches the temperature you like, add the salmon to the plastic wrap and roll it around so it’s fully covered. Transfer it to the heated bowl and leave it in the heated bowl for about 10 minutes. Transfer the fish to a cutting board and slice it up.
