To serve smoked pork loin, you’ll need a large roasting pan and a large dish. First, place your pork loin in the dish. Add the onion and garlic to the pan. Add 1 1/2 cups of the apple cider to the pan and cover. If you’re going to make the salad, now is the time to do it. Preheat the oven to 275 degrees. You can use a convection oven, or even a regular oven, but 275 degrees will keep your loin at a temperature of 125 degrees while it cooks. If you’re using a convection oven, use a control dial to maintain the temperature of the oven, rather than a timer. Add the carrots, celery, rosemary, salt and pepper to the pan. Turn the loin in the pan and make sure the loin is covered with the apple cider mixture. Put the pan in the oven and bake for 90 minutes, or until the pork is done. Remove the pan from the oven and turn off the oven. Check the temperature on your thermometer. It should be 125 degrees.
