I’m using short ribs today because they’re a bit of a challenge to break down. They’re extremely hard, which makes it difficult to get the meat out. After roasting, you have to melt the fat from the short ribs to get to the meat. It’s like making sausage. I only use short ribs for this recipe. You can easily use chuck-eye short ribs instead.

You can put it in the oven and cook it at 200°F for 6-8 hours. Then, you can slice it to be served like a steak.

Step 4: Prepare short ribs according to the recipe and set aside. Step 5: Season short ribs with salt and pepper. Step 6: Heat olive oil in a large, heavy-based saucepan over high heat. Add short ribs and sauté until meat is browned, about 5 minutes. Remove short ribs from heat and drain on paper towels. Season short ribs with additional salt and pepper to taste. Step 7: Remove cooked short ribs from pan and cover with foil to keep warm.
