1-1 pound shoulder, or pork shoulder
1/2 cup water
1 tablespoon salt
1/2 tablespoon black pepper
1/2 tablespoon paprika
1/2 tablespoon garlic powder
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon ground oregano
Preheat oven to 350 degrees. Cut pork shoulder into 3/4-inch chunks. Combine water, salt, pepper, paprika, garlic powder, chili powder, cayenne pepper, cumin, and oregano in a medium bowl. Rub mixture over pork, making sure all sides are well coated. Transfer pork to a roasting pan. Bake uncovered for about 2 hours or until pork reaches 145 degrees on an instant-read thermometer. Remove pork from oven, increase oven temperature to 450 degrees, and roast pork for an additional 30 to 45 minutes or until pork reaches 170 degrees. Pull pork apart with two forks, discarding excess fat.
