Every time I make brisket I notice that it does better on a cold day. I have no idea why this is. I’m sure it’s related to the fact that the meat was kept at a colder temperature. When it comes to brisket cooking, a low temperature is much better than a high temperature. However, brisket that is cooked at too high of a temperature can also be great.
