A piece of pork shoulder should reach this temperature in about two hours of cooking at a low heat. If the meat reaches this temperature in less than two hours, then you may need to add more time to the cooking process. A quick way to tell how much longer you need to cook it is to use a meat thermometer to check the temperature. The more you cook the meat, the more moisture is released, so keep in mind that the cooking time may need to be adjusted in order for the meat to reach the proper temperature.
