How To Cook Pork Tenderloin to Temperature

I was a butcher years ago, and I am not a pro chef or a master chef so I am not going to say this is the best way to cook pork shoulder, but it’s close! It’s one of the main cuts of meat that I buy to prepare for the freezer, and it’s a great cut to cook and serves a lot of people. You can make different dishes with pork shoulder, such as pulled pork, bacon, and sausage. The most important thing to remember is that the meat needs to be cooked for long enough to get a bit of a brown crust on it. The first indicator of the meat being done is if you touch the meat and it feels like a firm, not a soft, dense piece of meat. Secondly, when you stick a thermometer in the meat it should register about 180 degrees F (82 degrees C). What does this mean? A piece of pork shoulder should reach this temperature in about two hours of cooking at a low heat. If the meat reaches this temperature in less than two hours, then you may need to add more time to the cooking process. A quick way to tell how much longer you need to cook it is to use a meat thermometer to check the temperature. The more you cook the meat, the more moisture is released, so keep in mind that the cooking time may need to be adjusted in order for the meat to reach the proper temperature.
