Ingredients
500 g of scallop meat
1/4 cup (for the vinaigrette) + 2 tablespoons (for cooking) extra virgin olive oil
4 tablespoons butter
Zest and juice of 1 lemon
4 garlic cloves
2 spring onions
2 tablespoons of apple cider vinegar
120g feta cheese
1 pinch of red pepper flakes or ají argentino
1/4 cup fresh parsley, chopped
1/4 cup fresh oregano, chopped or dried

1/2 cup black or green olives, coarsely chopped (optional)
1/4 cup fresh basil, chopped (optional)
Elaboration
Dry the scallops with kitchen paper, pressing them lightly. Spice with salt and pepper.
Heat two tablespoons of olive oil in a large skillet over medium heat. When the oil shimmers, add the scallops and sear on both sides until golden brown, about 2-3 minutes.
Add the butter, lemon zest, garlic, and crushed red pepper flakes. Cook until the garlic is golden and the scallops are opaque, about 3-4 minutes. Remove from heat.
To make the dressing. Combine the remaining 1/4 cup olive oil, parsley, oregano, basil, onions, olives, vinegar, and lemon juice. Add the feta cheese and gently stir to combine.
To serve, place the scallops on a plate and pour over the feta and dressing. Season with whole grain or sea salt flakes. Serve with crusty bread or over lettuce.
