Best Way to Cook Whole Chicken
Yes, I love fried chicken and often make it myself. But this week I wanted to try cooking my whole chicken on the grill, which was new for me. Before the chicken is completely cooked, let it sit for about 30 minutes to a hour to help it cook evenly and the skin to crisp up. During this time, take off the skin of the chicken and pull out the rib bones. Rub the chicken with about a quarter cup of kosher salt and shake the chicken over the grill to get the salt stuck on the chicken. In addition to the salt, I seasoned the chicken with garlic, dried Italian seasoning, pepper, a few dashes of Worcestershire sauce, and some balsamic vinegar. I then sprinkled on about half of the breading mixture, which included paprika, coriander, cayenne pepper, and brown sugar. This is a combination of the roux and breadcrumbs that I mentioned in the previous post. The chicken was put on the grill for about 10 minutes, then was turned over and sprinkled with the remaining breading mixture. I cooked the chicken on the side for about 10 to 15 more minutes, or until a meat thermometer placed in the thickest part of the thigh registered 165 degrees Fahrenheit. The chicken was then removed from the grill, wrapped in foil, and placed in a 350-degree oven to finish cooking for about 45 minutes.
