It is a great way to use up all of the old canned beans you have in the fridge. Simply heat the beans and then put them in a tortilla. It’s a delicious way to make the most out of all the beans you have. If you don’t have canned beans, you can use canned beans in their liquid. I recommend rinsing them a couple of times to remove the liquid. Place the beans in a pot and add enough water to cover them. Bring the beans to a simmer and cook them until they are soft. Stir the beans as they cook to prevent them from sticking to the bottom of the pot. Once the beans are soft, drain them and use a potato masher to crush them. I like to add some spices to the beans as they cook. I like to add some cumin, garlic powder, chipotle powder, or any other spice you like. Some of my favorite spices are cumin, garlic powder, chipotle powder, and red pepper flakes. Refried beans are delicious and versatile. They can be served as a side dish or used as a topping for tacos, burritos, or a burrito bowl. Refried beans also work well as a base for chilaquiles or rice and beans.

1 tablespoon flour (couscous works as well)
1/2 teaspoon paprika
1/4 teaspoon chili powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/2 cup milk
1/2 cup water
3-4 tablespoons butter (optional)

Recipe for Refried Beans

Ingredients:
– 1 lb. dried pinto beans
– 5 large onions (about 4 cups)
– 1 cup red bell pepper (about 1/2 cup)
– 1/2 cup green bell pepper (about 1/2 cup)
– 2 cups fresh tomatoes (about 2 large)
– 1/4 cup vegetable oil
– 2 Tbsp chili powder
– 1 Tbsp ground cumin
– 1 Tbsp ground coriander
– 1 tsp dried oregano
– 1 tsp baking powder
– 1/2 tsp salt
– 1/2 cup tomato paste
– 2 cups vegetable broth
1. Soak the beans overnight in several changes of water to cover.
2. Drain the beans, rinse, and drain again.
3. Place the drained beans in a large pot with the onions and the remaining ingredients.
4. Bring the pot to a boil over high heat, stirring occasionally.
5. Reduce the heat to low, and simmer gently, uncovered, for 3 hours.
6. Stir occasionally, and check for water and seasoning.
7. Ladle the beans into a hot serving dish.
8. Heat the remaining ingredients in a saucepan over medium-low heat, stirring until the tomato paste is smooth.
9. Spoon the sauce over the beans, and sprinkle with cheese before serving.
