It’s officially Thanksgiving Day! This is the day when we eat cornbread and green bean casserole, but it’s also the time of year when we celebrate the many delicious Mexican dishes that are out there! The biggest dish on the Thanksgiving table is called Enmoladas de Tinga con Chorizo. Basically, this dish includes a layer of beef, enchiladas, and a red gravy. It’s a classic dish that brings a new meaning to the holiday. It’s not uncommon to find a traditional Thanksgiving dinner without the enmoladas. That’s ok! I still have all the other favorites.

After dinner on Thanksgiving, many people like to enjoy some dessert. Unfortunately, it can be a lot of work to make a pumpkin pie this way. So what’s an easier option? Make your own pan roasted pumpkin pie using canned pumpkin! All you need to do is place the canned pumpkin in a food processor or blender. Blend it until the ingredients are finely chopped and look like oatmeal. To make the pie crust, mix together the dry ingredients in a food processor or blender. Add the melted butter, and then add the ice water and process until the dough forms a ball. Press the dough into a pie plate, and then chill the dough in the refrigerator. Once chilled, line the pie shell with pie weights. Bake the pie shell in a 350 degree oven for 10 minutes, remove the pie weights, and bake for another 10 minutes. For the filling, beat the cream cheese and sugar in a bowl until smooth. Add the eggs and vanilla, and mix until the mixture is well combined. Then add the pumpkin and mix until well combined. Pour the mixture into the pie shell and return it to the oven. Bake the pie for 60 minutes. Remove it from the oven, and then let it cool to room temperature before slicing.
