Firstly, lets talk about “street corn” for a moment. “Street corn” is corn that has been grilled on a grill. It is then generally seasoned with salt, pepper and other spices and eaten on the cob. This is something that is very common in Latin America. However, it is not so common in America. Its probably because we Americans love our corn in its pure form. We’ve made the switch from corn on the cob to corn flakes and corn on the cob to corn dogs. However, this is an authentic Mexican dish. Many Americans don’t even know what “street corn” is. In some parts of Latin America, street corn is considered an appetizer. It’s a quick, easy snack that’s good for you. Its made with fresh corn and spices. So, in my recipe for “street corn”, I’m just trying to incorporate an American version of the dish. My version is a little bit more authentic. As for the mayo, I wanted to keep it simple. You don’t need a whole lot of it. You do need to take some time to marinate the corn for a few hours. You want to make sure that the corn gets soft and cooked on the grill. It will start to pick up a nice crust and develop a nice flavor.
