Once the brisket is cooled for about 30 minutes, we start slicing it. We slice the meat into one and a half inch sticks. These are then seasoned with a dry rub that is made with our own spices. Once the brisket has been sliced, we use a sharp knife and cut the rolls apart. The brisket is served hot, smothered in a barbecue sauce and topped with onions. It’s delicious.
