Slow Cooker Pork Shoulder, Apple, and Caramel Sauce
Combine all ingredients into a slow cooker. Cover and cook on high for 4 hours. Add the sauce ingredients to the slow cooker and stir to combine. Cook on low for 2 hours. Remove from slow cooker. Serve over rice with crusty bread.

The key to this pork shoulder is the sweet and savory flavors that are combined with a nice pork flavor. To get the best flavor, I used pork shoulder that was cooked low and slow with all of the fat trimmed off. This allows for the remaining meat to soak in flavor. For this recipe, I started out by browning the pork shoulder in my large cast iron pan. After that, I moved everything into the slow cooker, and finished up by stirring the scallion sauce and corn into the pork shoulder. This pork shoulder can be made with or without the scallion sauce, but the corn is an important flavor to get in there.
How to slow cook pork shoulder
Slow cooking allows the meat to take longer to cook while maintaining its tenderness. This is typically done by using moist heat that results in a slower rate of temperature rise. Because the cooker is more humid than the air, heat can be transferred directly into the meat and stay there for longer periods of time.
