About 2 years ago, I had my first steak at an event at a top-5 restaurant in San Francisco. I was blown away by the taste and was skeptical of cooking steak at home. I had never cooked a steak before and just assumed that it was a simple, quick process. As it turns out, it’s pretty easy to seared a steak. So I’m here to show you how to sear a steak at home.

How To Sauté a Steak on the Grill

A sous vide (pronounced soo-veed), is a type of vacuum-sealed food that cooks in a water bath at a lower temperature than the usual boiling point. They’re popular for cooking steak and many other types of meat. You can use a regular sous vide cooker, but a better method is to use a simple water bath. To create a water bath, you will need a half-gallon-sized plastic container with a lid. You’ll need some heat-resistant gloves, and you’ll need an accurate temperature controller. You’ll also need some cheesecloth and some tape to seal the lid of the container. To create the water bath, put your container on the ground or a countertop, and fill the container with enough water to come about halfway up the sides. Set the temperature control on the controller so the water is approximately 130° F. Place a sheet of aluminum foil on the bottom of the container. If you want to cook a steak, you’ll need to put a thick piece of beef on a rack, close the container, and allow it to cook for 30 minutes. You may need to flip the steak halfway through the cooking time, or even turn the controller up slightly. When the steak is done, remove it from the water bath and allow it to rest for at least 5 minutes before slicing it.
