A Sour Recipe

I like a nice vodka sauce on my pasta when I eat Italian food. I’ve never really made a true vodka sauce, so I decided to try and make one. This is my recipe:
1- Pour 2 cups of red wine into a sauce pan. I used a Russian red wine because it had some tartness. The tartness added some complexity to the end result, but you can use your favorite red wine.
2- Add a stick of butter and a couple of cups of tomato paste. I used tomato paste because the sauce really needed some thickness. The tomato paste took on the wine and butter and thickened the sauce to a nice consistency.
3- Reduce the heat to medium. Cook for about 10 minutes, stirring the entire time.
4- Add 1 cup of water, a 1/4 cup of sugar and 1 cup of vodka. Cook for another 10 minutes, then reduce the heat to low and cook for another 10 minutes.
5- Finish by adding a dash of salt and pepper to taste.
I served the sauce with a little pasta, and it was delicious.
