Like our culinary salute to the Texas cowboy, a great steak comes from a great piece of beef. When you’re shopping for beef, look for organic, grass-fed, and heritage breeds. You want beef that is naturally raised without hormones and antibiotics. And the best beef for our purposes is called Prime Rib. You can cook Prime Rib all different ways. One of my favorite ways is to make a Cowboy Steak. Whether it’s for a BBQ, a fajita, or a steakhouse, I love a great steak, or cowboy steak. It’s made with a Prime Rib, which is a tender cut of beef, and is often cheaper than a ribeye steak. Our country lifestyle has a whole lot to do with the origins of these two great meals. At our ranch, the cowboys cook a lot of beef. So, just like Texas has the cowboy steak and Mexico has the fajita, you can find a lot of cowboy steak in the recipe.
