Ingredients:

-1 small onion, diced
-1 green bell pepper, diced
-2 cloves of garlic, minced
-2 teaspoons ground cumin
-2 teaspoons chili powder
-2 teaspoons fresh oregano

-1/2 teaspoon nutmeg

-3/4 cup salsa

Preheat oven to 350 degrees. Place pork tenderloins in a medium to large glass baking dish. Season with salt and pepper. Pour olive oil into baking dish and let it heat. Add the onion, green pepper, garlic, and spices to the baking dish. Mix all ingredients together well. Top the pork with salsa, and place in the oven. Bake for 35-45 minutes, or until the internal temperature reaches 145 degrees. Remove from oven and let cool. Place one tenderloin on top of each tortilla. Cut the pork and roll up the tortilla with the slices of meat inside. Place the whole package in a baking dish and pour the remaining olive oil on top. Bake for 25-30 minutes, or until the internal temperature reaches 165 degrees.
