Miso is one of my favorite soup that is easy to make and perfect when it comes to a cold day. I make this sinigang once in a while just to feel cozy and warm in cold weather.

Cooking Time

Ingredients

· 1kg of salmon belly
· 1 medium sized onion
· 2-3 cm piece of ginger
· 1 garlic clove
· 1 bay leaf
· 1/2 teaspoon of ground cloves
· 5 cm piece of star anise
· 2 tablespoons of miso
· 2 tablespoons of white vinegar
· 1 teaspoon of salt
· 1 cup of water
· cooking wine
· cooking oil
1. Wash the fish. Cut off the thick ends of the fish so that it’s evenly shaped. Cut the fish into roughly 2cm by 2cm pieces.
2. Chop up the onion, ginger and garlic. Add the onions and garlic to a pan and fry them for a few minutes.
3. Add the bay leaf and star anise to the pan and fry for a few more minutes.
4. Add the salt and the miso and fry the mixture for a few more minutes.
5. Add the vinegar and then the cooking wine to the pan and stir it around.
6. Pour the water and cooking oil into the pan and put it over a medium heat. Cook the fish for 5-10 minutes.
7. Turn off the heat and add the ground cloves. Pour in the mixture and stir it around.
8. Let it sit for 10 minutes before serving.
