• 1 piece of salmon (1.5 – 2 pound)
• 1/2 cup of raw spinach (1/4 cup cooked)
• 1/2 cup of cherry tomatoes (1/4 cup cooked)
• 1/2 cup of cucumber (1/4 cup cooked)
• 1/2 cup of tofu
• 1/4 teaspoon of garlic powder
• 1/4 teaspoon of salt
• 1/4 teaspoon of pepper
• 1 cup of water
• 1 cup of oil (olive oil or peanut oil)
• 1 teaspoon of butter
Directions:
• Wash and drain the salmon and then remove the skin and bones
• Rinse the spinach, cherry tomatoes and cucumber
• Slice the tofu into cubes
• Measure the ingredients
• Preheat the oven to 400°F
• Place all the ingredients in a 9×13 baking dish
• Add the water, oil and salt
• Put the foil and bake for 30 minutes
