Pork is a common meat that is eaten worldwide. It is generally tender and low in fat, and has a mild flavor. However, it is also prone to having a small amount of taint (or a “tail” in the pork industry). This is due to the way the pig’s gastrointestinal system works. When the pig is stillborn, the meat does not have time to turn into fat. The pig’s colon has a strong ability to retain water, so it is able to hold a lot of bacteria. This can give off a strong smell, which is known as boar taint.
What foods contains boar taint?
Taint is a fancy word for a common and unnoticeable problem called “fecal ingestion.” When food passes through the gastrointestinal tract, certain things are commonly passed out of the body along with it, such as hair, sweat, and feces. In the case of pork, this means that pork products can contain feces along with their other ingredients. Pork is a common food item that contains boar taint. When the pork is cooked, the feces are cooked out, which leaves behind the taint. For this reason, it is important to avoid pork if you are trying to avoid boar taint.
About boar taint
Unfortunately, a certain percentage of boars carry a condition known as boar taint. This condition can cause individuals to produce a substance in the urine that resembles feces. This is called ketones, and it can be pretty unpleasant to smell. At present, no permanent cures for this condition exist, but it can be easily managed. Boar taint can be detected during a physical exam, but not always. So, if a farmer wants to know if his or her boar is carrying boar taint, he or she can ask for a urine sample to be tested. A veterinarian can then do this test. Since it is usually a permanent condition, there is little that farmers can do to reduce it, but they can pass on this information to the next generation of boars.
How to make it delicious
We have the secret recipe for cooking pork with boar taint. It is a national dish in Germany and there are great variations on this theme. Pork has a high fat content, so adding fat helps with the taste. I like my pork crispy, so we start by smoking the pork belly. You can use a wood-fired oven, a hibachi or simply grill it. To make the seasoning, we use white wine vinegar, pickles and salt. We cook it with smoked salt, sunflower seeds, black pepper, caraway, mustard seeds, garlic and bay leaf. We then shred it with our fingers and mix it with apple and celery. We let it marinate for about a week and then we are ready to cook it.

What is boar taint?
