To get more flavor, you should marinate the pork ribs in barbecue sauce for at least two hours. Next, prepare the ribs. Using a sharp knife, separate the meat from the bones. Chop the meat into cubes or strips. Next, place the meat into a large bowl, and sprinkle it with dry rub and spices. Mix well to evenly coat the meat. Place the coated meat into an airtight container. If you are using your oven, bake the pork ribs for 1 hour at 350 degrees, or until the meat is brown and crispy. If you are using a grill, heat the grill to medium-high heat. Grill the pork ribs for about 10 minutes. Remove the ribs from the grill and allow them to rest for 5 minutes. One small onion

1. In a large pot of water, bring your meat to a boil. While the water is coming to a boil, toss the meat in a large colander set in the sink. This will allow some of the blood to drain out of the meat, and will reduce any blood splatters.
2. When your water comes to a boil, pour in your salt and sugar, add meat, and return to a boil. Cook for 1 to 1-1/2 hours. Make sure the water does not come out of a boil. When your water is mostly boiling but not quite, you can add a tablespoon of apple cider vinegar to help.
3. After one hour, drain your meat, and place it back in the colander. You may need to leave it overnight in the colander. The next day, you may want to cut it into small pieces. This will allow the meat to brown. It should be tender enough for you to shred.

You can use a sharp knife, but the strips of meat should be no thicker than 1/4 inch. Season the pork with a small amount of salt and pepper. Stir the mustard into the brown sugar. Layer your pork strips on the bottom of a baking dish. You can make any combination of pork, but I prefer pork and onion. On top of the pork strips, add your onions. Cover the onions with the mustard sauce, and sprinkle some kosher salt and black pepper. On top of the onions, add your garlic powder and pork rinds. Then add your bacon. If you prefer, you can also add some thyme. Cover with foil and bake for about 3-4 hours.
