Ingredients
2 racks pork loin pork loin chops cut in half crosswise 2 large spoons salt and pepper 1/4 teaspoon freshly grated nutmeg 1/2 teaspoon paprika 1/2 teaspoon mustard powder 1/2 teaspoon garlic powder 1/2 teaspoon sugar 1/2 teaspoon chili powder 1/2 teaspoon paprika 1/2 teaspoon ground cumin 1/4 teaspoon freshly ground black pepper 1/4 teaspoon ground ginger 2 cups minced onion 1/4 cup minced carrot 1 teaspoon cornstarch 1 tablespoon salt 2 teaspoons freshly ground black pepper 2 cups beef stock 2 tablespoons canola oil 1/2 cup soy sauce 1/2 cup water 1/4 cup pickle juice 1 teaspoon chipotle pepper sauce 1/4 cup distilled white vinegar
How to cook Pork Loin Filet
A pork loin is a cut of meat taken from the pork shoulder. The loin is a muscle which is cut into four main sections: the sirloin, tenderloin, loin and ham. This cut comes from the center of the shoulder. To cook a pork loin, you’ll need to prepare it either pan-fried or sautéed. When pan-frying the loin, you’ll first sear it and then reduce the heat to medium. Once cooked, let the meat cool down and then slice it. To cook a pork loin sautéed, you’ll first cut the loin into four pieces. Then, you’ll cover the bottom of a frying pan with oil and then add a little salt to the pan. Then, you’ll lay the pork in the pan and let it cook. Once cooked, flip the pork and cook it for a few more minutes. Finally, take the pork out of the pan and let it rest for 10 to 15 minutes. Once it has rested, slice it.
Cooking Instructions
With a saucepan, sautee shallot until tender. Add shallots and garlic in pan. Sauté until shallots are translucent. Then add chicken broth and pork loin filet. Cook for about 15 minutes. Turn off heat and cover with lid. Allow to cool. Unwrap pork loin filet and shred the meat. Mix the saucepan into a bowl. Add sour cream and mix until combined.
