Its texture is similar to other pork cuts, but it is more tender.
How to make quick & easy pork jowl
Jowl is a very quick and easy roast pork dish. To make jowl, start by trimming the pork belly. You should remove all of the fat and any visible bones. The fat and small bones are easy to trim away, but larger bones can be hard to see. The jowls are large sections of the pork belly, typically about 5cm wide by 20cm long. If the pork belly has a bone running the length of it, you should be able to saw this off. Once the pork belly is trimmed, take a knife and make slits down the pork belly, cutting deep into the meat. The slits should be about 5cm apart from one another. This makes it easy to separate the jowls. To separate the jowl, lay the pork belly on a cutting board, and cut it along the slits. The pork should now be divided into jowls, with the cuts about 5cm apart. Make sure that the cuts are long and straight, rather than jagged, otherwise they will be difficult to separate.
