This week we are going to learn how to cook a pork loin center cut. This is one of the most delicious cuts of pork you can get. It is inexpensive, lean, and usually pretty tender.
In a small bowl, mix together mustard, dry mustard, garlic powder, black pepper and onion powder. If the pork loin has any skin on it, carefully remove the skin and discard. Then rub the pork loin with the mustard mixture.
Place the pork loin in a single layer in a roasting pan. Pour 1/4 cup water into the bottom of the pan. Cover the pan with foil and cook in a 350 degree oven for 2 hours. The pork loin should be very tender.
