• 1 tbsp each of olive oil, paprika and balsamic vinegar
• 1/4 tsp each of garlic and chilli flakes

• 1 large bunch of spinach, washed and trimmed

• Preheat oven to 180°C
• Take a large sheet of foil and wrap it around the pan
• Put the spinach in the pan and sprinkle with salt
• Tear the fillets into smaller pieces
• Rub them with the olive oil and paprika
• Add salt and pepper
• Place them in the middle of the sheet of foil
• Squeeze the garlic and chilli flakes over the fillets
• Tear the larger pieces of spinach into smaller pieces
• Pour the balsamic vinegar into the pan and bring to a boil
• Carefully pour the hot liquid over the spinach
• Let it all sit for a few minutes until spinach is wilted
• Unwrap the fillets and squeeze any excess water from them
• Lay them on top of the spinach
• Place in the oven for 15 minutes
• For easy clean up, simply fold the sheet of foil over the salmon
