This method is better suited for a restaurant or catering service. All you need is a sharp knife and a steady hand. Start by making a small cut down the center of the fish, making sure to cut all the way down. Cut both sides of the fish as evenly as possible. Start making the cuts into the pieces of fish, from head to tail. Once the cuts are all made, gently start pulling the salmon apart to separate the bones.
