Recently i smoked my first duck and was pretty happy with the results. Next time I will smoke chicken legs and make a tagine. I smoke at home and you don’t need to use a smoker. I found that a piece of wood works as a wonderful smoking tool. I also prefer to make a wood fire because it gives a much nicer flavour. I am not a fan of smokers. The oven does a really good job. The only thing you have to watch out for is to not over cook the legs. This will cause them to dry out. I smoke duck at 180C for 2 hours. It is best to keep the legs in the fridge for a couple of days.
Which Duck Legs Are Best
The best duck legs are those that have been smoked or lightly brined. These will be much juicier and more delicious. If you’re cooking smoked duck legs for a large crowd, freeze half of them, or even all of them, and then use them later in your cooking. When you reheat the duck legs, they will be even more tender and juicy. This is another way to use those smoked duck legs.
