Next, cut the breast into bite-sized pieces and put them into the bowl with the drumsticks and wings. The final step is to weigh the turkey. Make sure that the turkey is weighed while still on the butcher paper. To ensure that the turkey is well packed, you will need to add more weight to the oven. This will ensure that the bird cooks evenly. Once the turkey has been weighed, you are ready to place it on the smoking rack. For best results, place the turkey about 2 inches from the coals. You will need to be patient as this method takes time. The goal is to smoke the bird until it has reached an internal temperature of 160 degrees F, and the skin becomes crispy. One of the best ways to check that the bird is done is to touch the thigh. This will be warm to the touch, but not hot. The turkey will also be done when the smoke is coming out the sides. Remove the turkey from the oven and wrap it in aluminum foil. The turkey will be done when it is all wrapped up. Use plastic wrap to wrap up the cavity of the bird, or the plastic will melt when it is hot.

1. To begin, you will mix salt with hot sauce and honey in a bowl. Add white vinegar and turmeric to this mix. Put the turkey in this mix and let it marinate for 1 to 2 hours. If you do not have time, place the turkey in the refrigerator overnight.
2. When you are ready to cook the turkey, remove the turkey from the refrigerator and wash it in water. Place it on a rack over a foil lined baking sheet.
3. Set the oven to 400ºF and bake the turkey for 3 hours. Make sure you cover the bottom of the oven with aluminum foil for the entire cooking process.
4. Let the turkey rest for 30 minutes before you slice it.
