How to cook a perfect roast is the most frequently asked question I get on YouTube. That said, even I don’t know exactly what I’m doing. I’m always trying to perfect my technique. Here’s a rough guide: Start by choosing your roast. This is not a fast process. You want to find the roast that is going to be just the right amount of tender, but also not overly tough. Take your roast out of the fridge at least 15 minutes before cooking. This allows the roast to warm up to room temperature. Next, pat it dry. Even if it’s been prepped with a pat or two of butter, it still needs to be dry. It’s a lot easier to stick a knife into a moist roast. Lastly, place your roast on a cutting board. Do not put it in a pan or on a plate, which will lead to it oozing juices. Be sure to leave some of the fat on it. The fat will help keep the roast from drying out.
