Should the pork be brined
I’ve posted this in the past, but I thought I’d share it again as I’m preparing pork shoulder for a bbq dinner party. My butcher cuts pork shoulder into pieces that are roughly 3″ x 5″ x 4″. Before I can cook this shoulder, I need to brine it overnight. In the morning, I will take this brine and pour it over the pork shoulder. Next, I will cut the shoulder into 3″ thick slices, leaving each piece roughly 5″ x 4″. It’s worth noting that the shoulder is an extremely fatty cut of meat. I have found that this particular cut takes about 2 hours to cook at 225°. This shoulder will be cooked over indirect heat with apple wood.
