Often I need to cook a large pot roast in my oven for my entire family of 5. I like to cook it until it is almost done and then cover it with foil, and then continue to cook it. Once I have done that I remove it and put it in the fridge and cover it with foil. After that, I do not allow any steam to escape so it does not dry out. I then remove the foil and give it another half hour or until it is cooked through. I like to cook it in the oven for around 4-5 hours.
