How is sour cream made?

Cultured sour cream is produced by adding a culture of lactobaccillus acidico philus which is grown in milk and incubated at 72 degrees Fahrenheit until the desired flavor and thickness is reached. Then the culture coagulates protein, thickens cream and adds characteristic sour flavor. Once the proper temperature is achieved, milk must be cooled before the remaining wheys are removed. Finally, curdies are formed. To make sour creams, you need to add culture to skim milk. You can do this by stirring the mixture together and let it sit for about 15 minutes. Add culture and stir again. Let it rest for another 15-20 minutes and continue to stir. When the liquid is completely homogenous, strain out the solids. Pour the strained liquid into a container and refrigerate overnight. Serve chilled. For a more intense sour taste, add a little lemon juice or vinegar.
