An Easy Pork Shoulder Recipe

Skim off any fat that has accumulated on the surface of the liquid. Remove from heat and let cool for 5-10 minutes. Remove pork from pan and place in a large bowl. Pour in the lemon brine liquid and the remaining 1/4 cup olive oil and stir to coat. Cover with foil and place in fridge for 8 hours. After 8 hours, cut pork into pieces and use as desired.
