When Was Summer Sausage First Created?
Summer sausage was created in the 1800s by the German Von Merkatz and Merck. Von Merkatz was an ice cream maker who came up with the recipe. Merck’s family was in the meat business and they patented the Summer sausage recipe. They sold a ton of it at the local fair and, well, they were on to something. It became known as Summer sausage because the summer fairs started being held in the spring.
