I remember a time when baking anything from scratch meant spending a lot of time in the kitchen. This was usually only something I’d do on weekend mornings. These days, though, I often find myself baking something on weekdays. This is partly because I live alone and spend my weekends working. I also find that I have less time to spend in the kitchen because I’m not cooking for the weekend. It’s for this reason that I’m more comfortable baking recipes when I’m feeling pressed for time. To get some extra time in the kitchen, it’s important to try and cut as much time out of the baking process as possible. This includes not having to pre-soak your flour or use an expensive flour blend. It’s also important to keep things simple. This means using good ingredients and keeping as many recipes basic as possible.
Directions
Get ready to get creative. Make this recipe as healthy as you want, but it has to be zucchini bread. This is the basic recipe for one loaf, but you can make as many as you like. This recipe is lower in fat, which is an absolute requirement for Whole 30. To make this bread lower in fat, I used almond flour instead of regular flour. So, next time you make zucchini bread, switch to almond flour. This recipe is also lower in carbs. To make this bread even lower in carbs, I chose to use unsalted almond flour. If you want the bread to be even lower in carbs, you can use Bob’s Red Mill Gluten-Free All Purpose Baking Mix instead of the unsalted almond flour. I also chose to bake this bread in a loaf pan. This is to make it easier to get out of the pan. But you can bake this in a pan, too. The method is the same. You just need to make sure to grease your pan well. With this low-carb bread, I chose to keep the sugar low as well. To make this bread lower in sugar, you can use stevia instead of white sugar. I used erythritol, but you can use any other type of erythritol. The best way to substitute erythritol is by measuring it and adding water. 1 cup erythritol is equal to 1 cup water
