What is roasting chicken?

In order to know how to properly roast a chicken, it’s important to understand what roasting is. The main goal is to make the chicken crispy on the outside and a little more tender inside. The process of roasting is usually done in a oven. The chicken is placed in a pan, and then the temperature is slowly increased. It is then removed when the internal temperature reaches about 180°F. After the chicken is removed, it is placed on a rack until the temperature drops to 165°F. This process takes about two and a half hours for a chicken weighing about seven pounds.
