What Is The White Stuff On Salmon?
The white stuff on salmon is caused by Lactic Acid Fermentation (LAF). Fish are naturally slightly acidic and LAF is the chemical process in which the acids in the fish raise the pH of the water to the point where bacteria can grow and be harmful. Different species of bacteria can also produce different flavors in fish. In terms of lactic acid, the bacteria Streptococcus fluorescens produces an apple-like flavor while Leuconostoc species produce an herbaceous, earthy flavor. The most popular types of bacteria in salmon are L. innocens and P. fluorescens.
What Can I Use Instead of Salmon
The white stuff that comes off of salmon is something called halo and is mostly just dirt that has settled on the fish. Halo, or “harvest residue,” can be used as fertilizer or removed with a cloth. For some people, this is a major component of the “fishy” aftertaste in salmon. To get rid of this, you can soak your salmon in lemon juice for a couple of hours before eating.
The Health Benefits of Salmon
A recent study published in the Journal of Food Science found that eating salmon may help reduce your risk of heart disease. Researchers analyzed the effects of omega-3 fatty acids in fish on the risk of heart disease. They found that eating 1.8 ounces of salmon three times a week may help reduce this risk. The omega-3 fatty acids found in salmon are also known to reduce the risk of diabetes. A recent study found that eating 2.5 ounces of salmon a week was associated with a 17 percent lower risk of diabetes. Omega-3 fatty acids are also known to reduce inflammation and can help protect against heart disease, stroke, and macular degeneration. Omega-3 fatty acids can also reduce the risk of depression. Some studies have found that people who are depressed are at increased risk for suicide.
