American pastrami can be traced back to an older Lithuanian Jewish “cured” meat called “kefta.” A centuries old Jewish family tradition, a specially prepared cured meat was used as a dilligently guarded “secret” recipe that was carefully guarded to each family member. The man who knew the recipe could kill cattle, cut the meat, cure it, and make a sale. The meat was not sold publicly and was not available to the public until the early 1900’s. In 1933 the government required the meat to be exposed to the public so Americans could know the difference.
How to Cook Pastrami
Pastrami is a North American style of cured, smoked, and flavoured beef brisket. It is usually made with thinly sliced flank steak, although Boston-style pastrami is made with beef brisket, whereas pastrami from the eastern United States uses a higher proportion of the shoulder. In fact, the first recorded recipe for pastrami was written in 1845 in Boston, Massachusetts, United States by Charles Ranhofer for his restaurant, Delmonico’s. The restaurant was noted for serving American regional foods, including New York-style pastrami. Ranhofer’s recipe was republished in the Boston Cooking School Cookbook in 1976, which is generally considered to be the first modern American cookbook.

What Is Cured Meat?
There are many types of cured meats, including salami, prosciutto, and tongue. However, pastrami is a type of cured meat that comes from the hind leg of the cow. Most pastrami is made from the fat and lean meat from the hind leg of a steer or cow. Traditionally, this meat is then rubbed with spices and salt, and then smoked. However, there are many variations of this type of meat. Some chefs are now making use of new techniques such as fermentation or curing without smoking. Pastrami is typically served in slices, and is often eaten with pickles, rye bread, mustard, and mustard seeds. Some cultures also serve it with eggs and tomatoes, or as part of an egg salad.
