This dish is great for summer, because it includes some of the season’s favorite ingredients: fresh strawberries, and sweet-and-sour sauce. To cook it, you’ll need a small saucepan and a frying pan. The saucepan will be used for simmering the sauce and the frying pan will be used for cooking the duck. Fill the frying pan with some vegetable oil and place it on the stove. Once the oil is hot, add the garlic and the onions to the pan and cook for two to three minutes. Then remove them from the pan and set them aside. Add the pepper and a third of the ginger to the pan. Cook for three minutes more. Then return the onions and garlic to the pan, and add the strawberries and the remaining ginger. Cook for about three minutes more. Next, add the water, sugar, and vinegar to the pan, and simmer for 15 to 20 minutes. Then add the blackberries to the sauce, and cook for five minutes. Remove the dish from the heat, and pour the sauce over the duck. Then serve it on a plate and garnish it with the chopped strawberries.

When I was first thinking about my first dish for this challenge, I had duck breasts in mind. I was thinking that these could be cooked on the stovetop or grill and could be served either with or without a sauce. This time, I wanted to serve these with a sauce. A duck sauce is the most obvious choice for this, as the sauce is usually designed to taste great on everything. To begin, I picked up some duck breasts, I know that most of my friends will probably be a little hesitant when I say that. We are not talking about a duck fillet here, but fully-boned, thick-cut breasts. I also picked up some duck fat, which is really an essential ingredient for a great sauce. Finally, I bought some duck liver pâté, just for kicks. This was one of the best purchases I made for this challenge. We’ll talk more about the liver pâté later, but I wanted to share it with you because it adds a certain je ne sais quoi to the dish.
