crown is a low acid variety of peach. it is a non-grafted variety of peach. crown peach is a great variety for cooking. a hybrid of “peachgold” (gala) and “pawnee” or “peachy.” crown, just like gala and pawnee are not super ripe, although they can be used in pies, they also make a good quick cook meal with vanilla and peach ice cream. so for me i tend to combine crown and gala with vanilla and ice cream for a nice cool quick meal.
