Also, be sure to use a perforated roasting pan. And be sure to wash your hands before cooking. When you’re ready to begin, preheat your oven to 350 degrees Fahrenheit. Use the oven’s temperature setting, not the microwave. Also, use a digital thermometer, not a cooking thermometer. Once your oven is hot, remove the tin foil and rub the turkey with melted butter or oil. If you’re cooking the turkey with the breast down, put some butter in the pockets of the turkey. You can put an onion and a clove of garlic in the butter pockets, or you can do a rub with salt, pepper, and sage. The seasonings will change the flavor of the turkey. Place the bird in the oven and allow it to cook for 25 minutes per pound. You want to cook your turkey to 165 degrees Fahrenheit. Use a meat thermometer for the final temperature. Once you’ve reached this temperature, allow the turkey to rest for 5 to 10 minutes. Then you can carve it and serve it with some gravy.

You’ll need to get your hands on a turkey cooking kit, a roasting tin, a kitchen thermometer and a basting brush. An even surface and slow heat are all you need to get this right. You’ll also want to make sure that your turkey is wrapped in foil, so that the breast meat does not dry out. You will want to roast your turkey at 180°C (350°F) for one hour per kilogram of weight, adding a further 15 minutes if you wish. After roasting, remove the foil, and place the turkey on a low heat to allow the internal temperature to come back to at least 20°C (68°F). To keep the turkey moist, baste it with a mix of butter, garlic, olive oil and herbs. To make the garlic butter, finely chop two cloves of garlic, and then add 50g (2oz) of softened butter and 10ml (2 tsp) of lemon juice. Mix until well combined.
