GQ’s summer menu is back, and this year, we have some fresh ground beef from a seasonal farmer in California’s Central Valley. How’d they do it? By raising the cattle in the right temperature. “If you raise them hot, they’re stressed and throw off the flavor,” says Vince Vitale, a high-end butcher at Villaneuve. “If you raise them cold, you lose all the moisture, and it ends up dry.”
