I been smoking brisket for a long time now. It’s been about 10 years. I smoke about 12 or so a year. I am smoking a 14 pound brisket this year and smoking it at about 2 weeks. The temp on this is 215. I am going to smoke it for 3 days. Then I am going to wrap it in a foil wrapper, put a couple of bricks on it and put it on the back of the smoker for 2 weeks. Do I need to wrap it again? I have read some things that say not to wrap a brisket for more than a couple of days. Do you know what temp should I have it at? Thanks
