We get the salmon to us right as it is pulled off the truck and put in our walk in cooler. When we pull the salmon off the truck and put it in the fridge, it reaches a temperature of about 5 degrees in one hour and then goes down to about 15 degrees in one hour and twenty minutes. When it goes into our oven, it should be hot, but it’s important to take into account that it will continue to cook as it sits. You want to cook it in a 375 degree oven for twelve to thirteen minutes per inch, so if it’s 1 inch thick, it will cook for 12.5 minutes.
