How To Boil Chicken

Using lower temperatures for boiling means that the chicken will cook slower, and it will also retain more of the meat’s juices. If you are boiling chicken breast, you should aim for a target temperature of about 180°F. However, if you are boiling chicken thighs or drumsticks, a target temperature of about 195°F will give you a more tender chicken. Make sure that the water you are using isn’t cold, as cold water will give your chicken the worst results. Additionally, a large surface area will produce faster results. Place the chicken in a pot that has at least a 5-quart capacity, and make sure to cover it completely with water. You want the water to come up to the chicken’s thighs. Bring the water to a boil, and then reduce the heat to a low simmer. Let the water boil for about 15 to 20 minutes. Carefully remove the chicken from the pot, and allow it to cool. It’s very important to remove the chicken from the water after boiling. This will help the chicken retain more of the juices. Once the chicken has cooled, remove the bones and shred the meat into bite-size pieces. Use your hands to break the chicken apart if necessary.
