How to determine when pork is done
So, how do you know when pork is cooked to the point that it is safe to eat? The answer is simple, you just have to cook the pork until it reaches a safe internal temperature. Many people like pork cooked to a temperature of 160°F and/or 145°F. This allows it to stay safe from harmful bacteria, which can be caused by high temperatures.

Pork needs to be cooked to a temperature of 145F/63C. However, it should never be cooked to more than 155F/68C. This is because it will become dry and tough.
To Cook Pork Shoulder or Leg How Many Hours?
Cooking pork is a tricky process. Depending on the meat, the type of cut, and the desired doneness, it can be very difficult to get a perfect roast. As a general rule, you’ll want to get a pork roast cooked at around 120-125 degrees F for the minimum amount of time possible. If you want it well done, cooking to 140 degrees F will only take about 20 minutes. But keep in mind that a pork roast will continue to cook even after it has been taken out of the oven. You can tell if it’s cooked by lifting up the roast and feeling how hard it is. A tender roast will be soft to the touch, and a harder roast will be very firm. To tell if your roast is overcooked, push on the roast with your fingers. If it feels spongy, your roast is cooked through. If it feels like the roast is done and resists pressure, your roast is cooked through. If you’re planning on grilling your roast, you’ll want to cook it on an indirect heat setting. This will allow the roast to cook more slowly and allow you to cook it for a longer time. If you’re cooking a pork shoulder roast, you’ll want to cook it for about 2-3 hours. You can also tell how much it has cooked by checking the center. It should have a rosy color, but it shouldn’t be cooked all the way

Pork that’s been cooked to 185 degrees Fahrenheit and well done is called “medium”. This is good for grilling or sausages.
