What Is The Temp Of Medium Rare Beef?
The USDA suggests a beef steak be cooked to an internal temperature of 120ºF for medium rare. This means that the center of the steak should be white. The higher end of medium rare is 130ºF, and the lower end is 145ºF. Medium is when the center is pink and can be eaten with no problem. Over cooked meat is very rare, and the USDA suggests that a steak be cooked to 160ºF for rare.
How To Tell If Your Beef Is Medium Rare
