Add all these ingredients to a large pot, cover with water, and bring to a boil. Lower the heat and simmer for 45 minutes. Next, drain the chili in a colander. Add more water to the pot and cook down the chili. Mix in the ground beef and cook for another 30 minutes. At this point, you can serve it with rice, cornbread, or flour tortillas.

Annatto is used to color food, as well as to add a strong, nutty flavor. Annatto is a reddish-orange to orange-yellow coloring matter derived from the seed of the Caribbean bougainvillea plant. It’s a rich source of carotenes, including alpha-carotene and beta-carotene. These carotenes help protect your eyes by fighting free radical damage. Eating annatto can help reduce the risk of heart disease. Annatto has been shown to boost the immune system by enhancing the ability of white blood cells to kill bacteria. It also helps lower blood pressure, and can decrease the risk of colon cancer.
